Blueberry Scones

For breakfasts when you want a little something special, these scones are the perfect, easy, plant-based treat. They are light and fluffy, sort-of a cross between a shortcake drop biscuit and a traditional scone. No one would ever know they were made without animal products, and they were eagerly gobbled up by our omnivore eaters at brunch today.

She makes hers as traditional sliced scones. For some reason, my dough ended up being slightly too moist for that, so I made these as drop scones, and they were still scrumptious. I topped ours with raw sugar for extra crunch. She shows hers frosted. I’m certain they are delicious either way. We fought over who got the last one.
