Wing-It Falafel Bowls

Dinner tonight was free-form falafel bowls, meaning I didn’t use a recipe. As usual, I am following my cook once, eat 2-3 times motto. Here’s how I made dinner and 2-3 lunches in an hour:

- Step 1. Make the (nearly) Oil-Free Hummus. Using one can of garbanzo beans and one can of soft white beans, like cannellini or great northern beans, is the key to making creamy oil-free hummus.

Add to the bowl of a food processor:

  • One can garbanzo beans, drained and rinsed

  • One can soft white beans, drained and rinsed

  • The juice of 3 large lemons

  • A clove of garlic

  • A splash of tamari

  • 1/3 cup tahini

  • ~2 TBS Mama Lil’s Kick-Butt peppers, oil drained off. If there is some residual oil on the peppers, I don’t sweat it.

  • Salt to taste.

    Blend until smooth, adjust seasonings.

- Step 2. Make the Falafel Patties: Pour the hummus into a storage bowl. Don’t worry about scraping the food processor bowl. You will be using the same food processor to make the patties.

Add to bowl of food processor:

  • ½ of a large bunch of washed parsley, stems included. Pulse until in course pieces.

  • Add 2 cans rinsed garbanzos

  • 3 TBS ground flax seed meal

  • 1 TBS tahini

  • 1 TBS cumin

  • The juice of 1 lemon

  • 1/4 tsp salt

    Blitz until blended but not as smooth as hummus.

    Adjust seasonings to taste.

    Drop blobs onto a cookie sheet. Or, you can make them all smooth and pretty. I didn’t bother.
    This made 12 medium sized patties.
    Bake at 400 for a half hour. Flip midway.
    While patties are cooking, wash and chop a head of lettuce.

- Step 3. Make a Quick Middle Eastern Salad

  • 1 pint cherry tomatoes, sliced

  • 1 cucumber, peeled and roughly chopped

  • A six ounce jar of kalamata olives (I cut these in half)

  • A splash of sherry vinegar

  • A sprinkle of cumin

  • Salt to taste.

Serve with sliced avocado and pepperoncini.

As you can see from the final photo, there are a ton of left-overs for lunches.

These would pack well for work, just carry the falafel patties separately from the salad, or they will get soggy. My hub liked this dinner so much, he literally licked his bowl clean.😊
