Pico de Gallo

I love fresh Pico de Gallo. The combination of tomatoes, onions, lime juice, and heat is the perfect topping for tacos and burrito bowls.

Plus, it is totally delicious no matter what kind of ingredients you use, so you can toss in whatever you have on hand.

  • For your tomatoes, you can choose cherry tomatoes, romas, heirloom varieties, or any other fresh tomatoes you like.

  • For your onions, you can use regular white or yellow onions, red onion, scallions, or even chives.

  • For your spicy peppers, the sky is the limit - jalapeños, serrano, habañeros. It all depends on how hot you like it!

Here is an example of how to make a simple pico, but really any combination of onion, tomato, lime juice, and chilis is going to be scrumptious. You can add in cilantro or cumin, if you enjoy those flavors. That’s the beauty of fresh salsa, you can make it any way you prefer or change it up depending on what is in season.

The Pico de Gallo pictured below was made by combining:

  • ~1.5 cups cherry tomatoes

  • 5 green onions

  • 2 large jalapenos

  • Juice of 2 small limes

  • Pinch of salt

  • Handful of cilantro, including tender stems (optional)

  • Sprinkling of cumin (optional)

It’s super easy to make, and the flavors are so bright and fresh. I particularly love fresh pico when the cherry tomatoes are at their peak in the summer. Yum!
