Farmer’s Market Bowl with Green Goddess Dressing

Tonight’s dinner was based on Cooke and Kate’s Farmers Market Bowl.

If you haven’t checked out Cookie and Kate, her website is my absolute favorite place for finding plant-centered recipes. She is a wizard in the kitchen, and her photography is gorgeous. Be sure to give her a look.

I used what veg I had on hand and modified her green goddess dressing to be fully plant-based. Farro, roasted pepitas, and garbanzos made this bowl high protein with a great combination of textures.

The dressing was delicious. I could eat this like a soup.

Green Goddess Dressing:

  • -1/2 cup raw cashews, soaked in boiling water

  • Juice of 3 large lemons

  • 2 large jalapeños (adjust to taste)

  • 1 cup spinach

  • 1 large bunch cilantro

  • Splash of organic gluten-free tamari

  • Salt to taste

Mix in a high speed blender.
