Farmer’s Market Bowl with Green Goddess Dressing

I used what veg I had on hand and modified her green goddess dressing to be fully plant-based. Farro, roasted pepitas, and garbanzos made this bowl high protein with a great combination of textures.
The dressing was delicious. I could eat this like a soup.
Green Goddess Dressing:
-1/2 cup raw cashews, soaked in boiling water
Juice of 3 large lemons
2 large jalapeños (adjust to taste)
1 cup spinach
1 large bunch cilantro
Splash of organic gluten-free tamari
Salt to taste
Mix in a high speed blender.
