Black Bean Sweet Potato Burgers

Tonight we had delicious black bean sweet potato burgers from the Minimalist Baker. If you haven’t checked out the Minimalist Baker website, you will not be disapointed. Their recipes are always fantastic and easy to prepare.

When making the burgers, I added in 2TBS of ground flax to up the protein count and increase the healthy omega-3 fats. Plus, it acts as a good binding agent. Go crazy with your favorite spices. I used smoked paprika, garlic, cumin, ground chipotle pepper, and a splash of tamari for extra umami.

We topped these with balsamic caramelized onions, Mama Lil’s Kick Butt Peppers, and avocado. The burgers were the perfect blend of sweet and spicy.

We served these alongside spicy baby potatoes (tossed with more Mama Lil’s) and a mélange of roasted veg, which will be the base of my breakfasts and lunches for several days.

If you haven’t discovered Mama Lil’s Kick Butt Peppers, do yourself a favor and find a jar at your local store. Or, better yet, order them by the case directly from Mama Lil, as we do. Given that I try to avoid oil, I drain off as much as I can. That said, if you have a healthy heart and aren’t in need of weight loss, the oil is divine when drizzled on pizza or pasta, over vegetables, or added to soup. Not a drop of this jar goes to waste in my house. The hub uses it on everything. We like the milder varieties made by Mama Lil, but the KICK BUTT takes it to an entirely different level. I highly recommend you hunt down a jar.
