Vegan Richa’s Instant Pot Cookbook

I am a huge fan of Vegan Richa, and her website https://www.veganricha.com is a particular favorite for recipe inspiration. I also love my pressure cooker for easy meals, so I was thrilled when I saw Richa was releasing a new cookbook devoted only to pressure cooker recipes.

Richa’s specialty is Indian food, and this cookbook does not disappoint. There are three chapters devoted entirely to Indian recipes, including Indian Comfort Food, Dals and Lentils, and Veggies and Grains. She has over 50 new Indian pressure cooker recipes to try! Yay!

Other chapters include recipes like Mushroom Gyros with Tzatziki, Spicy Peanut Noodles, Enchilada Soup, Mushroom Risotto, and numerous pastas.

I am particularly excited to try some of her pressure cooker dessert recipes for special occasions, like Peach and Wild Blueberry Cobbler, Carrot Cake, and pressure cooker Brownies.
