Soba Salad with Orange-Ginger Peanut Sauce

We loved this soba noodle salad recipe. Her sweet peanut sauce made with orange juice and ginger was particularly delicious. It will definitely be going in our dressing rotation. For the salad itself, we combined soba noodles, white and purple cabbage, bell pepper, green onions, snap peas, carrots, roasted tofu, and black sesame seeds. The hub added extra roasted peanuts to his. It was totally yummy.

For the soba noodles, I was happy to find 100% buckwheat noodles. Often, soba noodles are a combination of wheat and buckwheat, so it was great to find some that were only buckwheat. I love buckwheat for its nutty flavor and high protein content. Buckwheat is an excellent source of manganese and thiamin, and it is high in soluble and prebiotic fibers, so it feeds our good gut bugs. If you can find the noodles that are 100% buckwheat, they are also gluten free. Rinse them in cold water after cooking to ensure that they don’t stick together.
