Fruit Crisp

Recipe adapted from The Minimalist Baker

As it is now summer fruit season (woo hoo!), I chose a simple nectarine crisp for our Father’s Day celebration dessert yesterday. Although I don’t typically cook with oil or sugar on a day-to-day basis, for celebration foods, I will happily make an exception. I’ve made it with apples, peaches, and nectarines with great success. I’m sure it would be equally delicious with any ripe fruit you have on hand.

Special Equipment Needed: Food Processor

Ingredients:

  • 7 to 8 ripe nectarines or peaches, rinsed and with the pits removed

  • 2-3 maple syrup (optional, used to sweeten fruit, if needed)

  • 1/2 cup raw almonds

  • 1/2 cup raw pecan halves, divided

  • 4 tablespoons brown sugar

  • 1/4 teaspoon salt

  • 4 tablespoons avocado oil

  • 1 cup rolled oats

Instructions:

  • Preheat oven to 350 degrees

  • Chop your nectarines or peaches into bite-sized pieces directly into an 8x8 baking dish. Leaving the skins on the fruit will provide added fiber and antioxidants, as many of the polyphenols are found in the peeling.

  • Taste your fruit. If it is overly tart, stir in 2-3 tablespoons of maple syrup. If your fruit is perfectly ripe, it likely won’t require added sweetening.

  • Pulse the almonds, half the pecans, the sugar, and salt in a food processor until roughly chopped.

  • Add the pulsed ingredients to a bowl with the oats, the reserved pecan halves, and the avocado oil.

  • Stir to combine.

  • Add this mixture to the top of your cut fruit.

  • Bake at 350 until the topping is crispy and the fruit is bubbling.

We served our crisp with Oat-ly vanilla plant-based ice cream, which passes the omnivore taste test. Oat-ly has limited ingredients, great ice cream texture, and a nice simple vanilla flavor.
