Blackened Tofu Tacos with Caramelized BBQ Onions

If you haven’t met Vegan Richa before, please let me introduce you. Her website, www.veganricha.com, is an incredible resource for plant-based cooking, filled with hundreds (maybe thousands) of scrumptious and creative vegan recipes. I could happily make one recipe after another and eat blissfully all year. I have been anxiously waiting for her latest book to release, and it came out yesterday and will arrive soon. Woo hoo! I loved her tofu spice rub. I omitted the oil and baked the tofu instead of pan frying it, as she calls for, and it was still so good. As you can see from the intensity of the spices used, this tofu wasn’t bland or lacking in flavor.

I’ve never had caramelized BBQ onions on a taco before, but I will definitely be making them again. She only calls for half an onion. I used two large onions and next time I will make three because they were that good. I caramelized them without oil (it really is possible), and added extra BBQ and hot sauce.

She recommends adding a cashew cream sauce, but we topped our tacos with my spicy cilantro sauce instead. We loved the herbaceous contrast with the BBQ onions.

Add a little avocado and some crunchy veg, and you have a totally unique and delicious taco. The carnivore prodigal son returned from college yesterday and ate about ten of these with zero complaints.

These tacos were seriously delicious. They were so unique, and they had unreal flavor with the combination of sweet BBQ onions, spicy tofu, creamy avocado, and spicy herbaceous cilantro sauce. Thank you Vegan Richa for another incredible recipe.
